Our Colby is a KY State Fair Gold Medal winner with its soft and moist texture paired with a  distinctive mild and mellow flavor that melts in your mouth. Colby is a crowd favorite and a go to starter cheese for kids.

First introduced in Colby, Wisconsin in 1885, this cheese is similar in flavor to Mild Cheddar, but softer with a more open & elastic texture and high-moisture content. 

Use Colby in any cheese tray, eat solo as a snack or on crackers, top a salad, melt for the perfect grilled cheese sandwiches, or even shred in casseroles.
